    Wash and dry produce. In a small pot , combine jasmine rice and water (for 2 servings; 2¼ cups for 4) with a pinch of salt . Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender, ~[18%minutes}. Keep covered off heat until Step 5.

    Meanwhile, halve, core specimens, and thinly slice long green pepper into strips. Trim and thinly slice scallions , separating whites from greens. Quarter lime . Drain and roughly chop pineapple .

    Heat a drizzle of cooking oil in a large pan over medium-high heat. Add green pepper strips; season with salt and black pepper. Cook, stirring occasionally, until beginning to brown, ⏱️ 4 minutes . Stir in half the garlic powder. Add 1/4 cup water. Cook until slightly softened and water evaporates, ~[3%minutes}. Turn off heat; transfer to a small bowl. Wipe out pan.

    Heat a drizzle of oil in same pan over medium-high. Add ground beef , scallion whites, mexican spice blend , and remaining garlic powder. Cook, breaking up meat, until scallion whites are softened, ⏱️ 2 minutes . Stir in tomato paste , beef stock concentrate , and 1/4 cup water. Cook, stirring, until beef is cooked through, ⏱️ 4 minutes . Turn off heat; stir in juice from half lime.

    Stir butter into rice until melted and combined; fluff with fork.
